Coconut Fish Stew
Stay warm with this delicious coconut fish stew, made with organic coconut water and fresh fish – ready in 30 minutes!
Servings: Serves 6
Total Time: 30 minutes
Ingredients:
- 1 kg of fillets of firm white fish
- 1 large red onion
- 2 green capsicum
- 1 red capsicum
- 4 plum tomatoes
- 3/4 cup (175ml) organic coconut water
- 3/4 cup (175ml) coconut milk
- 1 cup coconut pulp
- 4 cloves of garlic
- 1/2 cup fresh coriander + more for garnish
- 2 oranges
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp ground coriander
- Coconut oil or olive oil for cooking
- Salt and pepper to taste
- Optional: chopped bird’s eye chili
Directions
- Cut the fish fillets into medium-sized medallions.
- In a large pot, heat olive oil and sear the fish pieces for a few minutes (Proceed in batches if needed to avoid broiling). Remove from the pot and set aside on a plate.
- Dice the red onion, capsicums and tomatoes and mince the garlic.
- Add more coconut oil or olive oil to the pot over medium-high heat and cook the onion, capsicums and garlic for 5 minutes.
- Add the tomatoes and spices and continue cooking.
- Blend together the coconut water, coconut milk and coconut pulp.
- Add to the pot and squeeze in the juice from the oranges.
- Add the fish and cook for 10 minutes. If using chilli, add this now.
- Garnish with fresh coriander and serve with rice.
